A very small amount of electricity needs to flow in a circular path from the circuit board and its battery and back.
By holding the ground wire in one hand, you are giving a return path for the electricity.
By connecting the board to something that conducts electricity (like a banana) and tapping it with your finger from your other hand, you are completing the circuit and allowing electrons to flow through you!
